Ruby Red Beet Juice Recipe

Happy Hump Day (and Veteran’s Day), friends! I’m sharing with you my favorite beet juice recipe. I’m a weirdo who loves the taste of veggie juices, but if you’re not, I think you miiiiiight just like this one. Why? Because beet juice has a naturally sweet flavor, not the bitter, grassy taste you  might not enjoy in green juices. I did add ginger, because I like the flavor kick and it’s beneficial digestive & inflammation properties.

This one’s a little high in [natural] sugars, so I recommend drinking it in the morning to get the most out of that energy boost. It’s also full of vitamins C, K, Beta-Karotene (converted into vitamin A).

Some other tips? Drink any juice as soon as possible after making it, to get the most out of the nutrients. And if you want more fiber, add a tablespoon of chia seeds. (You’ll also get some great Omega-3s and protein from them too!)

All ingredients should be scrubbed & cleaned before juicing.

Ingredients

2 medium beets

3 medium carrots

1 1-inch chunk of ginger

1 medium apple (Any kind you like! I like Gala)

Optional:

1 medium orange

3 kale leaves

Add celery for garnish

 

Warning:  Beet juice can turn your stool a reddish color, so don’t be alarmed! Perhaps this is TMI, but you might be happy I warned you.
